Trebbiano Spoletino is part of the large Trebbiano family, the most widely cultivated white grape variety in Italy. Specifically, Trebbiano Spoletino is cultivated only in Umbria, where it has found its land of choice. In particular in the wide area that leads from Spoleto to Foligno and Montefalco, in the province of Perugia. Here it is particularly appreciated for its ability to produce wines characterised by rather fruity aromas. It reaches maturity in October and is usually vinified as a single variety. As in the case of this Spoletino, Trebbiano DOC proposed by Cantina Fratelli Pardi. Harvested by hand and vinified super-soft, the grapes are lightly pressed to obtain the free-run juice. A temperature-controlled fermentation follows, followed by a good eight months on its fine lees. In the glass it has a beautiful straw yellow colour with greenish highlights. The nose is surprising for the delicacy of its aromas reminiscent of ripe fruit, citrus fruits and flint. In the mouth it is full, enveloping and creamy. A wine of long persistence, the producers recommend it in combination with ravioli filled with ricotta and Bronte pistachio, seasoned with tomato and, given its provenance, some truffle shavings. For lovers of veg cuisine, it is also perfect with tasty chickpea hummus.
