IGT Salento Rosso, Critèra is a Primitivo produced by Schola Sarmenti from (relatively) young vines, less than 15 years old. A wine characterised by sincere aromas, typical of a precious grape, deeply tied to its territory. Grapes harvested by hand and delicately placed in small ventilated boxes to preserve their integrity, vinified with wisdom in temperature-controlled steel tanks. The result is a wine that could be described as 'meaty', of great typicality. A red from the territory with a strong hint of ripe dark fruit, but well supported by a natural freshness. A pleasantly tannic red, with a long, heady finish. It is the right wine if the menu is all about meat. But even away from meals, at a snack with friends, a glass of this Critèra will certainly tastefully accompany a slice of good salami or a piece of tasty cheese.
