There is a big 'novelty' in the cellar. It is Nùali, a novelty in fact, Moscato Passito proposed by Siddùra. Moscato di Sardegna DOC Passito, this little Sardinian gem originates near the north coast of the island, on the hillsides overlooking the sea. Here the soils are predominantly sandy and the climate is naturally breezy. Simply ideal for raisining. Here, the Moscato reaches a great concentration of fruit, resulting in an extraordinary passito. Having reached the right degree of drying, the grapes are harvested by hand and brought to the cellar. Here, after destemming, a particularly sugar-rich must is obtained, which is separated and fermented for a long time in steel tanks. Maturation of the resulting wine, which is also very slow, takes place 'sur lies', i.e. in contact with the noble lees, to give it greater complexity and structure. A sweet wine that is already good today but which also shows considerable ageing potential. If well stored, in fact, this Nùali can easily evolve in the cellar for over 10 years. Golden yellow, the nose is surprising for the richness of its aromas. Ripe fruit, with hints of apricot, maracuja and orange peel. In the mouth, however, it is velvety and enveloping, with a pleasant aftertaste of white flowers and spices. What is most surprising, however, is its great freshness, minerality and taste-olfactory persistence. Excellent with small pastries or, for lovers of territorial pairings, with a sliver of good Sardinian Pecorino.
